Food-related thoughts from a 30-year old Taiwanese who has been a vegetarian for 18 years and has spent some time in Germany, Nederland, and Denmark. Not a recipe book. (not a typical one at least) Like most rules, recipes are for the guidance of the wise, and the obedience of fools. Following rules is heartless, lazy, and boring.
Recipes can't be sensitive to anyone's palate. I rarely follow recipes (especially when they don't need precise chemical reactions.) A good 'recipe to me is an image, a concept, an opportunity to step out my comfort zone, discovering all the things about myself in the world. I recommend reading only to get a gist of what is suggested and then create your own dish. Make each and every dish unique with what you have to work with and what tastes good to you at the time full heartedly--after all, our taste buds regenerate every couple of weeks, and our ever-changing minds, personal experiences, and many other factors decide our appetites
